I.
Arthur Kowalski woke at five in the morning the way he always did—without an alarm, without hesitation, simply because his body had learned the rhythm of the mill and refused to forget it. He pulled on his work shirt, laced his boots, and walked the three blocks from his apartment on Fourth Avenue to the small shop he called Kowalski Tofu.
The shop was twelve feet by fifteen feet. A grinding machine occupied one corner. A wooden table took up the center. A shelf along the back wall held blocks of finished tofu, wrapped in cloth and stacked like white bricks. That was all there was. No sign, no window display, no customers who came for ambiance. People came for the tofu.

This was how it worked for six months. Every three days, the old man appeared. Every three days, he brought a sack of perfect beans and took away a block of tofu. Arthur's business improved. The tofu made from those beans was smoother, richer, firmer than anything he'd ever produced. Customers noticed. Some came specifically for "the special tofu." Arthur didn't correct them.
But Arthur was a suspicious man. He had been suspicious before he came to America—in Poland, where suspicion was a survival skill, not a personality trait. And this didn't make sense. Why would a stranger give him better beans than the wholesale market? What was the catch?
He watched the old man carefully. He noticed things: the man's shoes were always clean, even though he walked on dirty streets. His windbreaker was always the same shade of yellow, never fading. He never ate anything. He never drank anything. He simply appeared, traded, and left.
One afternoon, when the old man didn't show up, Arthur felt something he couldn't name. Not worry. Not disappointment. Something in between.
The next day, the old man didn't come either.
By the fifth day, Arthur had made a decision. He closed the shop at noon, walked to the corner where he could see the street, and waited.
The old man never came.
III.
Arthur tried to find him. He asked people in the neighborhood—a Polish grandmother who sat on a bench all day, a Italian shopkeeper who played cards in the back room, a Black minister who ran a community center on the next block. None of them knew him.
"Yellow windbreaker?" the shopkeeper said, thinking. "Maybe he came to the community center. Old people sometimes come there. Not for food. For company."
Arthur went to the community center. A woman named Martha ran it—fifty-something, busy, kind but not sentimental.
"Yellow windbreaker?" she said. "Oh, I remember. He came a few times. Asked if we had extra tofu. I said no, but he came anyway."
"Did he say why he wanted it?"
Martha shrugged. "He said he could smell you making it. From the street." She paused. "Lonely people come to the center. Not because they're hungry. Because they want to talk to someone."
Arthur stood in the doorway of the community center, looking at the empty chairs, the bulletin board with faded flyers, the coffee machine that had been broken for months. He thought about the old man's eyes—weak tea color, but steady. He thought about the beans, perfect and warm and impossibly generous.
He went home and opened his ledger. The last entry read: Today's income: three sacks of beans, one block of tofu. Profit: reasonable.
He closed the ledger. He soaked the beans. He ground them. He made tofu.
The tofu that night was good. Not extraordinary. Just good. The kind of good that comes from repetition, from practice, from doing the same thing every day for twenty years and getting it right through sheer stubbornness.
Arthur ate a piece standing over the sink. It was warm and soft and tasted of soy and salt and the slow accumulation of ordinary days.
He thought about the fox. He thought about the old man. He thought about whether the beans had been magical or just really good beans, whether the old man had been a ghost or just a lonely old man who liked tofu, whether any of it had mattered.
He didn't know. He probably never would.
But he knew this: when he had pried the grate loose and the fox had pulled its leg free and looked at him with those dark, wet eyes, he hadn't thought about beans or profit or回报. He had thought: this animal is in pain. I can help. So I helped.
That was the whole story. Maybe that was everything.
IV.
The next morning, Arthur woke at five. He made tofu. He set it on the shelf. He waited for customers.
A Polish woman came at eight. She bought two blocks. "Good tofu today, Arthur," she said.
"Thank you," Arthur said.
An Italian man came at nine. He bought one block. "My mother would have liked this," he said. "She made something like it in Sicily."
"Maybe it's the same," Arthur said.
The man smiled and left.
Arthur stood in his twelve-by-fifteen shop, listening to the grinding machine cool down, listening to the sounds of Fourth Avenue outside—cars, buses, people talking, a street musician playing a guitar that sounded slightly out of tune.
He opened his ledger to a fresh page. He picked up his pen.
Today's income: two blocks of tofu, one customer who said his mother would have liked it. Profit: enough.
He closed the ledger. He washed the grinding machine. He waited for the next customer.
There would be no more old men in yellow windbreakers. There would be no more sacks of perfect beans. There would be only the beans from the wholesale market, which were adequate, and the tofu he made from them, which was good, and the customers who came because they liked the taste of something made carefully by someone who cared.
That was the world. Not magical. Not cruel. Just there. And if you made tofu in it, you made it as well as you could, and you hoped that was enough.
It usually was.
