The Devil's Recipe

The rain had been falling since noon. It fell harder at midnight, when Jack Moran pulled his car into the lot behind the diner on Sunset Boulevard and killed the engine. Through the rain-streaked windshield, he watched the diner's neon sign buzz like a dying insect and thought that if he had known Los Angeles for three years and still couldn't tell when to leave something alone, maybe the problem wasn't the city.

Inside the diner, a man in a grease-stained apron was moving behind the counter with a speed that made no sense. Jack had been watching for ten minutes. He was supposed to be on a different job—tracking a missing ledger from a shipping company that didn't want anyone asking questions. But the ledger could wait. This couldn't.

Thirty seconds. From the moment the woman at counter three handed over her dollars to the moment the paper bag was in her hand, thirty seconds elapsed. Jack checked his watch because he had nothing better to do and his hands were cold and because thirty seconds was the kind of number that meant something or it meant nothing and he needed to know which.

He got out of the car and went inside. The diner smelled of fried oil and floor wax and something older underneath, like a building that had been a something else before and hadn't entirely stopped being that something else.

"One burger, fries, drink," Jack said to the man in the apron.

The man nodded and didn't speak. He moved to the grill, flipped a patty with a spatula that had been bent and straightened until it was exactly the right shape, dropped fries into oil that hissed like rain on hot concrete, poured a soda from a tap that dripped at the rhythm of a heartbeat. He assembled everything on a counter painted with yellow lines and handed the bag to Jack across the counter in exactly thirty seconds.

Jack took the bag to the only empty table, which was in the corner, which was always where the interesting tables are because interesting things happen in corners where nobody is looking. He opened the bag. The burger was hot and properly salted and the fries were crisp in a way that suggested the oil had been changed recently, which in a diner like this was either luck or discipline. Given the speed, it was probably discipline.

"Who designs this?" Jack asked the man when he went to pay.

The man looked at him. His eyes were empty the way a well is empty—deep but not empty, just filled with something you can't see from the surface. "I do," he said.

"What's your name?"

"Nobody uses it."

"Everybody uses a name."

"Not me."

Jack left a dollar on the counter and went back to his car. He sat in the rain and ate the burger and thought about what he was thinking about, which was money. Always money, even when it wasn't about money.

He came back the next night and the night after that. On the fourth night, he went in after closing and found the man—Nobody—washing the grill.

"I want to talk to you about your system," Jack said.

Nobody dried the spatula and hung it on the rack. "There's nothing to talk about."

"There's always something to talk about. Thirty seconds is not an accident. It's a design. And designs are worth something."

"They're worth what I make them worth."

"They could be worth a lot more than what you're making them worth right now, which is—what? A diner on Sunset and a man with no name."

Nobody set down the towel. "What are you proposing?"

Jack smiled. It was not a nice smile. It was the kind of smile a man wears when he's about to do something he won't be proud of but won't be sorry about either, which is the most honest kind of smile there is. "I propose that I find you partners. People with money. We open more places like this one. Same speed. Same food. Same yellow lines. And I take a cut for making it happen."

"Why me?"

"Because you're the only person I've ever seen make a hamburger like it was defusing a bomb."

Nobody was silent for a long time. The fluorescent light above the counter hummed. Somewhere outside, a siren was coming and then going.

"My name is Tony," he said. "Tony Vescovi. I was in the kitchen for Sal Marcano for twelve years."

"Sal Marcano. Of the Marcano family."

"The same."

Jack felt something he hadn't felt in a while, which was interest that had nothing to do with money. "What did you learn from Sal?"

"That everything in a kitchen has a place. Everything has a time. If you know both, you can feed a hundred men in the time it takes another kitchen to feed ten."

"That's your system."

"That's the kitchen."

Jack leaned against the counter. "Tony. I need you to understand something. The system isn't just a kitchen. It's a key. And keys open doors."

"Keys also lock doors."

That night, Jack went home and slept for four hours and woke up at eight and went to a bar on Pico Boulevard and met a woman named Maureen Black at ten.

Maureen was twenty-eight, blonde, and wearing a dress that was too warm for November and too thin for modesty. She was sitting at the bar alone, which in Los Angeles is either a prelude to something or a warning. Jack sat down beside her and ordered a coffee he wouldn't drink.

"You look like a man who knows something," Maureen said, without looking at him.

"I look like a man who doesn't know enough," Jack said. "What about you?"

"I look like a woman who knows exactly what she knows." She turned to look at him then. Her eyes were brown and sharp and they had the kind of confidence that comes from being repeatedly right about things other people get wrong. "What's your name?"

"Jack Moran."

"Jack. I'm Maureen. I work for a man named Lancelot Cross."

Jack had heard of Lancelot Cross. Everyone in Los Angeles who worked with their hands had heard of him. Cross owned or controlled forty percent of the commercial real estate in the city's restaurant district. He was sixty-five, fat, and ruthless in a way that was almost administrative. He didn't threaten people. He just made decisions that destroyed them.

"What do you work for him?" Jack asked.

"I manage relationships. Cross doesn't trust his own people with people. He trusts me."

"What kind of relationships?"

"The ones that involve food and land. Those two things run this city, Jack. One feeds people. The other feeds the men who own the places people feed. I stand between them."

Jack finished his coffee, which was cold and bitter and exactly what he needed. "I've found something," he said. "A system. Thirty-second food service. It's real. And I think Cross would pay a lot of money for it."

Maureen considered this. "And what do you think it's worth?"

"I think it's worth whatever I can get."

She smiled. It was the first time he'd seen her smile, and it transformed her face from sharp to dangerous in the way a knife transforms from kitchen tool to weapon when it stops being used for food. "Then you're smarter than you look. Come see me tomorrow. Bring details."

Jack brought details. He brought Tony to Maureen's office—a small room above a real estate agency on Wilshire, with a desk, two chairs, and a window that looked out onto a wall. Tony didn't speak. He demonstrated the system instead. He used the desk as a grill, two pens as tongs, and a notebook as his ticket board. He moved through the motions in forty seconds. Maureen watched without blinking.

"How much?" she asked when he finished.

"I don't know," Jack said. "A lot."

"A lot is not a number."

"Five hundred thousand."

Maureen leaned back in her chair and looked at the wall behind Jack's head and said, "I'll talk to the Old Man."

The Old Man wanted to talk to Tony himself. This happened three days later, in Cross's office on the forty-second floor of the Atlantic Building. Cross was exactly what Jack expected and exactly what he didn't expect—larger than life in person, and kinder. He offered Tony a cigarette. Tony declined. Cross smoked one himself and pointed the smoke at the ceiling like he was reading the letters in it.

"You made this system for Sal Marcano," Cross said.

"Yes."

"Did you make it for me?"

"No."

Cross smiled. It was not a kind smile. "That's all right, Tony. You don't make things for people. People make things for themselves and then other people figure out how to use them. That's the deal."

Jack stood in the corner of the office and watched this conversation the way you watch a game you don't understand but can tell is important. He understood one thing: Tony was not afraid of Cross, which meant either Tony was braver than Jack gave him credit for or Tony had something Cross didn't.

The FBI showed up on a Tuesday. Jack was at a diner on Venice Boulevard—different diner, same rain, same thoughts—when a man in a cheap suit sat down across from him and said, "Mr. Moran, I'm Special Agent Riley. I understand you've been spending time with Tony Vescovi."

"I don't know what you mean."

"You made a system for the wrong man."

"I didn't make anything. I observed it."

"Observation is a form of participation in this town." Agent Riley smiled the way people smile when they've decided you're either going to help them or be helped out of the way. "Here's the situation, Mr. Moran. Tony Vescovi is a man who has been on my desk for eight years. He is also, apparently, the inventor of a food system that is about to become very valuable. My bosses would like him to cooperate. His bosses would like him to disappear. You are standing in the middle, which means you are either very lucky or very stupid. I'm here to find out which."

Jack went back to the Sunset diner that night and found Tony behind the counter and two men in the booths who were not customers. One of them had his hand inside his jacket in a way that suggested his hand was holding something metal and cold.

"Tony," Jack said. "We need to talk."

Tony set down the spatula. "You brought the Feds."

"I brought someone who might help."

"You brought someone who eats men like me for breakfast."

Jack looked at the two men in the booths. They looked back. One of them smiled, and it was worse than not smiling at all.

"Here's what I know," Jack said, talking fast because in his experience, talking fast kept you alive when talking slow got you killed. "Cross wants your system because it controls kitchens. The Feds want you because they control nothing and want something they can use. And I want a cut of whatever deal happens, which is a honest want and probably the only honest thing in this room."

Tony looked at Jack for a long time. The fluorescent light hummed. Outside, a car drove through a puddle and the sound was like the ocean.

"I will show you the system," Tony said. "One more time. You tell me if it's worth what I think it's worth."

He did. Forty seconds. Perfect salt. Perfect timing. Jack watched it the way you watch something beautiful that you know is going to be stolen.

He told Maureen what he'd seen. She listened without expression and then said, "The Old Man is going to offer you two hundred thousand. Don't take it. Ask for three."

"I don't think I want to sell," Jack said.

Maureen looked at him. For the first time, her certainty had a crack in it. "Jack. This is not a system you sell. This is a system you survive."

He didn't survive. He sold, because that's what men like Jack do—they sell things that aren't theirs for money they don't need and spend it on things that don't matter, and call it wisdom at the end because it's the only thing left. He sold the system to Cross for two hundred and fifty thousand. Cross got the kitchen. Tony got disappeared. The Feds got nothing. Maureen got a raise.

Jack sat in his car outside the diner the night after the sale, watching the new owners—men in clean shirts who didn't know the forty seconds by heart—fumble through a rush. It took them four minutes. The queue stretched out the door. People were angry. A man threw his burger on the ground and walked away.

Jack put the car in gear and drove home through the rain. He didn't look back. In the glove compartment was a check for two hundred and fifty thousand dollars and a set of notes that described, in detail, the Tony Vescovi Thirty-Second System. He didn't open either one.
